Cornish Yarg, a a Cornish semi-hard cheese made from grass-rich milk and wrapped in stinging nettles or wild garlic. Cornish Yarg is handmade on Lynher Farm near Truro, having moved from Launceston in 2006 as they needed larger premises.
The natural rinds help the cheeses mature and impart flavour, producing a delicate, mushroomy taste with a more crumbly texture than the slightly firmer Wild Garlic Yarg, which whispers rather than shouts its name.
Lynher Dairies is now one of the most successful makers of artisan cheese in Britain, consistently winning Gold at British and worldwide cheese shows.
In 2012 Cornish Yarg won Best English Cheese at the International Cheese Awards, and Reserve Champion at the Royal Bath and West Show.
The dairy processes 2 million litres of milk, hand picks two tonnes of nettle and wild garlic leaves from the neighbouring woodland, and produces more than 200 tonnes of cheese a year.
From April to October there are occasional Cheese Factory Tours and cheese tastings, Monday to Saturday. Contact the farm for more details as availability changes depending on the season.
